BLT Caesar Salad with Creamy Parmesan Dressing
We took your traditional BLT sandwich apart to create this tasty BLT caesar salad drizzled with a creamy Parmesan dressing. Using homemade dressing takes this recipe to the next level!

Ingredient
Dressing:
1 cup (250 mL) plain Greek yogurt
1/2 cup (125 mL) buttermilk
1/2 cup (125 mL) freshly grated Parmesan cheese
4 tsp (20 mL) fresh lemon juice
2 garlic cloves, minced
1 tsp (5 mL) dried parsley flakes
1/2 tsp (2 mL) freshly ground black pepper
Salad:
6 slices back bacon, chopped
2 Romaine lettuce hearts, rinsed, dried and chopped
2 cups (500 mL) cherry tomatoes, halved
2 cups (500 mL) croutons
Directions:
In the bowl, combine the yogurt, buttermilk, parmesan, lemon juice, garlic, parsley and pepper; stir well to combine. Chill.
In a skillet, cook bacon over medium heat. Stirring occasionally, until it begins to brown, about 5 minutes.
In a large bowl, combine lettuce, tomatoes and bacon. Drizzle with desired amount of dressing and toss. Top with croutons and serve.
Note: Remaining dressing can be kept in an airtight container and stored in the refrigerator for up to a week. Stir before using.
