Cheesy Pork Quesadillas
These ooey-gooey cheesy pork quesadillas are loaded with seasoned ground pork and lots of gooey cheese inside a crispy tortilla shell. A simply irresistible weeknight dinner that is sure to become a family favourite.

Ingredient:
1 Tbsp (15 mL) canola oil
1/4 cup (60 mL) onion, diced
1 clove garlic, minced
1 lb (500 g) ground pork
2 Tbsp (30 mL) tomato paste
1/4 cup (60 mL) water
1 tsp (5 mL) onion powder
1 tsp (5 mL ) dried oregano
1 tsp (5 mL) paprika
1/2 tsp (2 mL) cumin powder
1/2 tsp (2 mL) sea salt
1/4 tsp (1 mL) chili powder
1/4 tsp (1 mL) black pepper
2 cups (500 mL) shredded Mexican cheese blend
8 (8 -inch/20 cm) flour tortillas

Directions:
In a large skillet, heat canola oil over medium-high heat. Add onion and garlic, and saute for about 2 minutes.
Add pork and continue cooking until meat is cooked through. Stirring occasionally to break meat up into small crumbles, about 6-8 minutes, Drain of fat.
Reduce heat to medium. Add tomato paste, water, onion powder, oregano, paprika, cumin, salt, chili powder and pepper. Stir and continue to cook for 2-3 minutes. Set aside.
Place tortilla on work surface. Sprinkle with 1/4 cup (60 mL) cheese, scatter with 1/2 cup (125 mL) pork filling and top with remaining 1/4 cup (60 mL) cheese. Cover with another tortilla.
Preheat non-stick skillet over medium-low heat. Place quesadilla in skillet, press down lightly, cover and cook for 2-3 minutes or until cheese has melted and tortilla is crisp on the bottom. Flip over and repeat on the other side.
Transfer to cutting board, cut into wedges and serve immediately with sour cream and salsa.
