White Bean and Pasta Stew
This hearty one pot stew is a quick and easy meal that is sure to warm you up on a cold winter day.

Ingredient
6 mild Italian sausages, casings removed
1 Tbsp (15 mL) canola oil
1 large onion, chopped
3 stalks celery, chopped
2 large carrots, chopped
1/2 tsp (2 mL) salt or to taste
1/2 tsp (2 mL) fresh ground black pepper or to taste
3 garlic cloves, minced
4 cups low sodium chicken broth
1 cup (250 mL) mini tortiglioni
1 - (19 oz / 540 mL) can white cannellini beans, rinsed and drained
1/2 tsp (2 mL) Italian seasoning
1/4 cup (60 mL) fresh flat leaf parsley, chopped
Directions:
Remove casing off sausage and roll into bite-size meatballs.
In a Dutch oven, heat 1/2 Tbsp (7 mL) oil over medium-high heat. Fry meatballs until browned, about 8-10 minutes. Remove from the pan and set aside.
Pour remaining oil into the pan. Add onion, celery, carrots and saute for 4-5 minutes or until tender. Season with salt and pepper. Stir in the garlic and continue sauteing, about 1 minute.
Return meatballs to the pot. Add chicken broth, pasta, beans and Italian seasoning. Simmer for about 10 - 15 minutes until pasta is cooked and meatballs are cooked through. Transfer to bowls and sprinkle with parsley.
