Mexican Pork Fajitas
No need to go out for fajitas! They are quick and make a great shareable family meal.

Ingredients
1 lb (500 g) Pork tenderloin, cut into thin strips
1/4 cup (60 mL) canola oil
1/4 cup (60 mL) lime juice
1 grated rind from lime
1 Tbsp (15 mL) chopped garlic
2 tsp (10 mL) oregano
1 tsp (5 mL) cumin
1/4 tsp (1 mL) chili powder
1/2 tsp (2 mL) pepper
1 EACH large green and red pepper, in julienne strips
1 medium Spanish onion, in julienne strips
2 small tomatoes, sliced
6 - 6 inch (15 cm) flour tortillas
Toppings: shredded Cheddar or Monterey Jack cheese, shredded lettuce, sour cream, guacamole, salsa, chopped green onions or chopped cilantro.
Directions
In a bowl, combine pork with canola oil, lime juice and rind, garlic and spices. Marinate for one hour, refrigerated.
In a large skillet or wok over medium-high heat, stir-fry pork strips with marinade in skillet for about 2 minutes. Add vegetables; cook until vegetables are just tender.
Meanwhile, wrap tortillas in a warm tea towel and warm in microwave.
Transfer pork mixture to heated platter to serve with warm tortillas and a selection of toppings.
