Southwestern Country Style Kabobs
Fire up the grill for some kickin’ kabobs!

Ingredient
1 lb (500 g) Boneless Country Pork Ribs, cut in 1-inch cubes ( You can also use sirloin or boneless rib chops)
Marinade:
1 Tbsp (15 mL) chili powder
1 Tbsp (15 mL) dried oregano
1 tsp (5 mL) ground cumin
2 garlic cloves, crushed
1 tsp (5 mL) sea salt
1/4 tsp (1 mL) freshly ground pepper
1/4 cup (60 mL) canola oil
2 limes, juiced
Directions
In a resealable bag combine chili powder, oregano, cumin, garlic, salt, pepper, oil and lime juice.
Add pork to zip-lock and coat well with marinade. Set aside for 1 hour to absorb the flavours.
Thread pork on skewers and discard marinade.
Preheat barbecue on high; reduce heat to medium.
Place kabobs on lightly oiled grill; close barbecue cover and grill 2-3 minutes per side. The pork is cooked when the internal temperature reaches 160 °F (71°C).
Remove from the grill and let rest for 3 minutes. Serve.
